Journey Overview

A wheel of Parmigiano Reggiano lifted from its copper vat. Egg dough rolled thin enough for tortellini. Balsamic vinegar transferred through barrels that have served successive generations. This journey explores the skill and choices behind ingredients familiar around the world, meeting the people who give them their character.

Begin with three nights in Umbria, where Bevagna, Montefalco, and the surrounding countryside reveal the connection between agricultural traditions and regional cooking. A seasonal truffle experience, a food-producer encounter, and a winery visit provide different perspectives, balanced with historic villages and independent time.

Travel by direct train from Spoleto to Parma for three nights. An early visit to a working cheese dairy follows Parmigiano Reggiano through production and maturation. A separate day explores the countryside’s curing traditions, leaving time for Parma’s art, architecture, and regional table.

Continue through Modena, where a family acetaia introduces the patient work behind traditional balsamic vinegar. Bologna, one of Italy’s culinary capitals, provides the next base for three nights. Explore historic markets and specialty shops with a culinary specialist before joining a skilled sfoglina to learn the techniques behind hand-rolled pasta. Between culinary encounters, explore the city’s cultural heritage and enjoy time independently.

Florence provides a fitting finale. A private session with an accomplished chef explores seasonal ingredients, regional dishes, and the techniques behind Tuscan cooking, concluding with a seated lunch and selected wines. A separate day in Chianti connects estate wines and olive oil with the landscapes and decisions behind their production.
